Hamburger with Homemade Relish and Caramelized Onions

Ingredients

Patties

  • 5 pounds ground chuck
  • 3/4 cup red onions, finely diced
  • 1/4 cup chopped Italian parsley
  • 1/4 cup chopped chives
  • 2 tablespoons Sambal
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon minced garlic
  • salt and freshly ground pepper
  • 12 Hamburger buns

Hamburger Relish

  • 800 grams pickling cucumbers, roughly chopped
  • 5 millilitres mustard seeds
  • 1 millilitre turmeric
  • 1 millilitre celery seeds
  • 1 Thai chili, stem removed and roughly chopped
  • 1 garlic clove, chopped
  • 160 millilitres cider vinegar
  • 100 millilitres granulated sugar
  • 10 millilitres salt
  • 100 grams onion, peeled, cored and finely chopped
  • 75 grams red pepper, cored, deseeded and finely chopped
  • 2 bay leaves

Caramelized Onions

  • 1/4 cup olive or vegetable oil
  • 3 large spanish or yellow onions, skin removed and cut into thin strips

Directions

Patties

  1. In a large mixing bowl combine ground beef, red onions, parsley, chives, sambal, Worcestershire sauce, garlic, salt and pepper.
  2. Mix well until all ingredients are evenly distributed throughout meat.
  3. Make into individual patties and refrigerate until ready to use.
  4. Preheat grill to high heat.
  5. Lightly oil grill.
  6. Place patties on grill and cook until desired doneness.
  7. Place patty in hamburger bun.
  8. Garnish with caramelized onions, hamburger relish, tomato, lettuce, pickle and if desired, warmed short rib meat and pan seared foie gras.

Hamburger Relish

  1. In a food processor, combine pickling cucumbers, mustard seeds, tumeric, celery seeds, chili, garlic, vinegar, sugar and salt. Process until finely chopped.
  2. In a large saucepan, add cucumber mixture with remaining ingredients.
  3. Cook over medium low heat for about 1 hour, stirring occasionally.
  4. Remove from heat and allow to cool.
  5. Refrigerate until ready to use.

Caramelized Onions

  1. In a large fry pan on high heat add oil.
  2. Add thinly sliced onions and stir.
  3. Cook onions, stirring often with a wooden spoon, scraping the bottom of the fry pan to loosen any natural caramelization that is occurring.
  4. Continue to cook until onions are soft and dark golden brown. Remove from heat and set aside until ready to use.
