Ingredients

  • 1 1/2 pounds of chicken breast, cut into ¼ inch cubes
  • 1/2 cup Dijon mustard (125 ml)
  • 1/2 cup honey (125 ml)
  • 3 cloves garlic, crushed
  • 2 tablespoons extra virgin olive oil (30 ml)
  • Salt and pepper, to taste

Directions

  1. In a glass bowl combine mustard, garlic, oil and salt and pepper to taste until well blended. Refrigerate 1/2 mixture until needed.
  2. Combine the other ½ of the mixture with the chicken cubes and allow them to marinade for at least 30 minutes. While chicken is marinating soak wooden skewers in waater to prevent them from burning when they are baking.
  3. Preheat oven to 350 F. Thread chicken through the skewers. Place them at least ½ inch apart on a well oiled baking sheet and bake for 10 to 15 minutes – brushing between turning. When cooked take out of the oven and arrange on a serving platter with remaining honey Dijon mixture for dipping.
