Recipe summary
The classic soufflé still has the ability to mesmerize even the most well travelled guest and yet it’s quite simple to prepare. The Meyer lemon is a cross between a mandarin and a lemon making it less acidic with a thinner skin than a regular lemon. I absolutely love the taste. To substitute a regular lemon, just grate the lemon zest with a fine grater, not the way I describe below.
