Potatoes Baked in the Coals

Ingredients

  • 6 large russet potatoes, sliced in half lengthwise
  • 6 slices bacon
  • 1 onion, cut into slices about 1/2 cm (1/4 inch) thick
  • 12 sheets 12 sheets heavy-duty aluminum foil
  • butter (optional)
  • 1 pinch salt and pepper

Directions

  1. Preheat the grill, setting the burners to medium, or make a campfire and let it burn down to a bed of coals. Generously season the insides of the potatoes with salt and pepper. Lay a folded slice of bacon and an onion slice on the centre of 6 potato halves. Top with the other 6 potato halves. Wrap each potato tightly in 2 layers of aluminum foil. If using a gas grill, a single layer will do. Cook on the grill or in the coals until very tender, about 45 minutes. If desired, serve with a pat of butter.
