Grilled Vegetables with Tofu

Grilled veggies are so quick and easy to make, add a little tofu and voila, a vegetarian dish in minutes!

Ingredients

  • 3 tablespoons grape seed oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 tablespoon honey
  • pinch of salt
  • unit freshly ground pepper
  • 1 clove garlic, chopped
  • 6 slices of tofu, about 1/4 inch thick
  • 8 stalks asparagus, fibrous ends removed
  • 2 unit portobello mushrooms, stems removed
  • 1 unit red pepper, stems and seeds removed and cut in quarters

Directions

  1. Preheat a grill to medium high.
  2. Put the oil, vinegar, spices, honey, salt, pepper and garlic into a large bowl and whisk well. Add the tofu, asparagus, mushrooms and peppers and toss gently until all the spices are evenly distributed.
  3. Brush the preheated grill lightly with oil. Place the tofu and vegetables onto the grill and brush with marinade. Grill for 3 to 4 minutes and turn and grill the other side until done, about 3 to 4 more minutes. Arrange grilled tofu and vegetables on a platter
