Lobster Balls

Ingredients

  • 6 ounces fresh lobster meat, cooked, chopped
  • 2 ounces cooked mashed Yukon gold potato
  • 2 tablespoons red pepper, diced fine
  • 1 tablespoon chives, chopped fine
  • 1 tablespoon fresh Italian parsley, chopped fine
  • Salt and pepper to taste

Directions

  1. Breading station: Seasoned AP flour, Egg wash, Panko bread crumbs (Japanese bread crumbs)
  2. Combine the lobster with the cooked mashed potato. Add the red pepper and fresh herbs and mix until incorporated. Season with salt and pepper and roll into bite sized round balls. Bread with flour, egg wash and then panko. Deep-fry in preheated oil until golden brown. Sprinkle with salt and serve.
