Description:

Prosecco is a slightly sweet, bubbly Italian wine. It's fun, it's light and it's a great match for lots of different foods. Prosecco has light fruity flavours with just a touch of sweetness, but it is still very refreshing because of the bubbles. It's a great affordable alternative to more expensive French Champagne, making it perfect for everyday entertaining.

Pairing:

Prosecco is a great match for anything salty and sweet. The sweetness of the wine matches the sweetness of the melon, without dominating. And the light, refreshing bubbles help balance out the saltiness of the cured ham. This is also a good example of how regional food and wine can work well together - this is a classic Italian appetizer, paired with an Italian bubbly!

Ingredients

  • 1 ripe cantaloupe melon
  • 7 whole pieces of thinly sliced prosciutto
  • 14 Toothpicks

Directions

  1. Remove the skin from the melon by cutting off both ends of the cantaloupe. Stand the melon up on a cutting board and carefully slide the knife down along the skin of the melon removing the skin only. Discard skin. Cut in half and remove the seeds. Discard seeds.
  2. Cut the melon into 1 inch cubes (2.5 cm)
  3. Cut the prosciutto lengthwise into 14 long pieces.
  4. Wrap each melon with a slice of proscuitto and secure it with a toothpick. Serve cold.
