Honey Butter Roasted Scallops with Gingered Carrot Puree and Vegetable Bhaji Fritters

Ingredients

Honey Butter Roasted Scallops

  • 12 large sea scallops
  • 1 tablespoon honey
  • 1 tablespoon butter
  • 1 teaspoon olive oil

Vegetable Bhaji Fritters

  • 1 leek, julienned
  • 2 carrots, julienned
  • 2 red onions, julienned
  • 1 cup chick pea flour
  • 1 cup all purpose flour
  • 1/2 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon tumeric
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon baking powder
  • 2 cups water
  • 1/4 cup olive oil

Gingered Carrot Orange Glaze

  • 2 cups carrot, peeled and cut into ½ inch rounds
  • 1 cup orange juice
  • 2 cups water
  • 1/4 cup butter
  • 1 teaspoon ginger, peeled and minced
  • 1 teaspoon grated orange peel
  • Salt and freshly ground black pepper

Directions

Honey Butter Roasted Scallops

  1. Season the scallops with salt and pepper. Heat the olive oil in a large skillet over high heat. Carefully place the scallops in the pan. After one minute add the honey, and then add the butter. Turn scallops over and cook for another 1- 2 minutes or until the scallop is just opaque in the center, spoon over the honey butter mixture during this time. Then transfer the scallops to paper towel to drain, before plating.

Vegetable Bhaji Fritters

  1. Put the flours and ground spices in a bowl and slowly pour in the water. Stir with a wooden spoon to make a bright yellow batter.
  2. Pour the olive oil into a large nonstick frying pan over medium high heat. Mix the vegetables, a little at a time with some of the batter. Then carefully drop into the hot pan. Cook until golden brown on both sides. Drain onto paper towels.

Gingered Carrot Orange Glaze

  1. In a medium heavy bottom saucepan, cover the carrots with the orange juice, water, ginger and orange peel. Bring to a boil and then let simmer until the carrots are very soft about 30 minutes. Transfer the carrots and the remaining liquid to a blender. Add the butter and blend until smooth, season with salt and pepper.
