Ingredients

Maple Peameal Roast

  • 1 whole piece of peameal bacon roast (3.5 lb/1.750kg)

Childrens' Variation:

  • 1/4 cup maple syrup (50ml)
  • 1 tablespoon yellow ballpark mustard (15ml)
  • 1/4 teaspoon of each sea salt and freshly ground black pepper (1ml)

Adult Variation:

  • 1/4 cup maple syrup (50ml)
  • 1 tablespoon dijon mustard (15ml)
  • 1 teaspoon chopped fresh rosemary (5ml)
  • 1/2 teaspoon freshly ground black pepper (2ml)
  • 1/4 teaspoon sea salt (1ml)

Directions

Maple Peameal Roast

  1. Preheat oven to 350F/180C.
  2. Cut bacon in half crosswise. Cut three 1-inch slits across each piece.
  3. Place a cooling rack on a large rimmed baking sheet lined with foil. Place bacon on rack.
  4. Childrens’ Variation:
    Combine maple syrup, ballpark mustard, salt and pepper. Brush one half with basting mixture.

    Adult Variation:
    Combine maple syrup, Dijon mustard, rosemary, salt and pepper. Brush one half with basting mixture.

  5. Bake in centre of oven for 25 – 30 minutes and baste with remaining mixture.
  6. Bake for 50 - 60 minutes, or until a thermometer registers 130F/55C.
  7. Let rest for 5 minutes before slicing.
