Rice Noodles with Orange and Pineapple

Ingredients

  • 1 package rice noodles (198g)
  • 2 tablespoons soy sauce (30ml)
  • 1 tablespoon fish sauce (15ml)
  • 1 tablespoon granulated sugar (15ml)
  • 1 teaspoon orange rind (5ml)
  • 2 tablespoons orange juice (30ml)
  • 1/4 teaspoon sesame oil (1ml)
  • 1 1/2 cups chopped pineapple (375ml)
  • 2 green onions
  • 1 teaspoon toasted sesame seeds, to garnish (5ml)
  • 2 tablespoons canola oil (30ml)
  • 6 cups water (1.5L)
  • salt and freshly ground black pepper

Directions

  1. In a large saucepan bring salted water to a boil. Add noodles, turn off heat and soak noodles for 3 to 5 minutes, until al dente.
  2. In a bowl combine soy sauce, fish sauce, sugar, orange rind, orange juice and sesame oil. Reserve.
  3. Drain noodles and rinse with cold water. Drain.
  4. Heat oil in a wok or large non-stick frying pan, over medium high heat. Add noodles, pineapple and sauce. Stir-fry for 3 minutes, until noodles are tender. Add green onions and toss to combine. Season with salt and pepper.
  5. Garnish with sesame seeds, if using.
