Roast Leg of Lamb with Apricots

Recipe summary

Simply roasted tender lamb coated in dried apricots and fresh rosemary.

Ingredients

  • 5 pounds leg of lamb, boned
  • 1 pound dried apricots
  • 9 cloves, garlic
  • 1 bunch fresh rosemary, (at least 5-6 sticks)
  • 1/2 cup vegetable oil

Directions

  1. Stuff the center of the leg of lamb with apricots. Insert garlic cloves into the meat using a knife to make slits. Thread 5/ 6 sticks of rosemary through the outer edges of the roast. Season with salt & pepper.
  2. Preheat oven to 450 F. Place meat in roasting pan with vegetable oil. Sear meat for 15 minutes and then turn heat down to 375 F and roast for another 1 1/ 4 hours.
