Twice Baked Sweet Potatoes

Recipe summary

Ingredients

  • 4 sweet potatoes
  • 1/4 cup raisins
  • 2 tablespoons grated fresh ginger root
  • 2 tablespoons butter
  • Salt

Directions

  1. Preheat your oven to 375 degrees.
  2. Bake the sweet potatoes until tender, about 30 minutes.
  3. Cut the tops off of the sweet potatoes and scoop the flesh into a bowl, leaving it about 1/2 inch thick inside the potatoes. Add the raisins, ginger and butter to the sweet potato. Season with salt and mash together. Scoop back into the reserved potato skins and bake until golden, about 20 minutes.
