Date and Orange Squares

These classic squares made a sweet addition to the Waterloo County Quilter’s Guild potluck. This recipe was adapted from the late Edna Staebler’s in her More Food That Really Schmecks cookbook.

ingredients

cups (375 mL) pitted dates

cup (175 mL) granulated sugar

cup (175 mL) boiling water

tsp (5 mL) grated orange zest
¾
cup (175 mL) orange juice
¾
cup (175 mL) chopped pecans

cup (250 mL) butter
1 ¼
cups (300 mL) packed brown sugar
1 ½
cups (375 mL) flour
1
tsp (5 mL) baking powder
½
tsp (2 mL) salt
1 ½
cups (375 mL) rolled oats (not instant)

Step 1

In blender or food processor, blend dates, sugar, water, orange zest and orange juice until soft like jam. Stir in pecans.

Step 2

Cream butter with brown sugar. Sift together flour, baking powder and salt. Stir into butter mixture. Stir in oats until mixture is crumbly. Press half of the oat mixture into bottom of buttered 9-inch (2.5 L) square pan. Spread date mixture over top; cover with remaining oat mixture. Bake in 325°F (160°C) oven for 35 to 45 minutes. Serve warm or cold, with whipped cream or ice cream, if desired.
