Healthy Tahini Chocolate Chip Cookies

Makes: 18 cookies
Ingredients:
1 cup tahini
½ cup coconut sugar
1 large egg
2 tsp pure vanilla extract
½ tsp baking soda
1 (100g) 70% (or higher) dark chocolate bar, roughly chopped
1/4 tsp coarse sea salt
Directions:
1. Preheat oven to 350ºF. Line two large baking sheets with parchment paper.
2. In a large bowl, whisk to combine tahini and coconut sugar. Whisk in egg, followed by vanilla and baking soda. With a spatula, fold in chocolate until evenly incorporated.
3. Scoop 1 Tbsp-sized portions of cookie dough and add to prepared baking sheet, leaving about 3-inches of space around each cookie, as they will spread quite a bit. Do not flatten cookies. Sprinkle a small amount of coarse sea salt on top of each cookie.
4. Bake for 10 to 12 minutes, until dry on top and spread, rotating pans halfway through if oven racks are staggered. Cool cookies on pan for 5 minutes before transferring to a wire cooling rack to cool completely. Serve.
