Nothing says staying indoors quite like a delightful seasonal spread bursting with fresh ingredients. We absolutely love to use the best of the season, and one summer and early fall favourite is tomatoes. Fresh, juicy and perfectly ripe at the end of summer, we’re always looking for ways to make them a star. Our new favourite is to assemble a quick and easy bruschetta bar when spending time inside with loved ones (because we’re desperate to switch things up these days!).  With a few simple ingredients, you can showcase the bright, herbaceous flavours of this beloved app and present an impressive spread in just a few minutes.

tomatoes, seeded and diced or 12 cocktail tomatoes, diced

cup Vidalia onion, minced

clove garlic, grated

Tbsp extra virgin olive oil

cup labneh or Greek yogurt
¾
cup ricotta
¾
cup hummus

cup chopped, toasted walnuts

cup chopped parsley
½
cup chopped basil

cup shaved Parmesan
¼
cup toasted pine nuts

Tbsp za’atar
1
baguette, cut into 1/2-inch slices

Step 1

In a medium bowl combine tomatoes, onion, garlic, olive oil, salt and pepper.

Step 2

Place labneh, ricotta, hummus, walnuts, parsley, basil, Parmesan and pine nuts into small bowls and place on platter.

Step 3

Sprinkle labneh with za’atar and drizzle with olive oil. Sprinkle ricotta with herbs, if desired.

Step 4

Assemble all items on a platter and serve with plates for guests to assemble their appetizers.
