3-6-9 Dressing

Named after the 3-6-9 oil it contains, this dressing is hard to describe. It’s savoury and sweet all at the same time. It is very versatile, working equally well on salads as on rice or noodle bowls. A blend of different oils, 3-6-9 oil is designed to contain the ideal balance of omega-3 and omega-6 essential fatty acids. It provides all of the good fats you need, without any of the bad fats you should avoid. If you can’t find it at health food stores, you can subsitute flaxseed, hemp, or even olive oil.

Yield: 2 cups (500 mL).

tsp (5 mL) sunflower oil

cups (500 mL) onions, chopped

cloves garlic, minced
cup (75 mL) raw tahini

cup (60 mL) olive oil

cup (60 mL) 3-6-9 oil
¼
cup (60 mL) lemon juice, freshly squeezed

Tbsp (45 mL) tamari
2
Tbsp (30 mL) vegetable stock
1
Tbsp (15 mL) sesame oil
1
Tbsp (15 mL) pure dark maple syrup

Step 1

Heat sunflower oil in a frying pan over medium heat.

Step 2

Add onions and garlic, and cook until softened and starting to brown. Remove from heat and set aside to cool.

Step 3

Combine cooked onions and garlic, tahini, olive oil, 3-6-9 oil, lemon juice, tamari, vegetable stock, sesame oil, and maple syrup in a blender. Blend on high speed until smooth. Use immediately or transfer to an airtight container and refrigerate for up to 3 days.
