Millet is a staple in many dry and arid climates. Unlike many grains, it is rich in silica, necessary for keeping hair and nails healthy and keeping bones flexible. Add this recipe to your table as an alternative to rice or potatoes.

ingredients

cup organic millet, soaked overnight, drained and rinsed
1
medium cooking onion, diced
1
red pepper, diced
3
clove garlic, minced
4
-80/10 kalamata olives, pitted and diced
2
roma tomatoes, seeded and diced
1
small zucchini, diced
1
green onion, sliced
2
Tbsp orgainic olive oil
2
cup filtered water or organic chicken broth
unrefined sea salt to taste
fresh cracked pepper to taste

Step 1
Heat organic olive oil in a medium saucepan on the stove top. Add onions, red pepper and zucchini with a little unrefined sea salt and sauté for a few minutes (until the vegetables have begun to brown).
Step 2
Add organic millet. Stir frequently, allowing millet to toast on the bottom of the pan for a few minutes.
Step 3
Add organic chicken broth or water and stir. Allow to simmer on the stove for 15 minutes or until all the liquid has been absorbed.
