A spiced vegetarian side dish with tender cooked potatoes and chickpeas.

ingredients

cup olive oil
1
whole onion, diced

tsp turmeric
1
tsp garam masala
1
tsp curry powder
2
cups chickpeas, soaked and boiled
3
whole potatoes, peeled, boiled and cubed
Salt, to taste

can (28oz) crushed tomatoes

cup fresh coriander, chopped

Step 1

Heat olive oil in pan. Add onions and cook until soft, then add your turmeric, garam masala and curry powder. Stir until well combined.

Step 2

Add your chickpeas and potatoes and mix well. Now it’s time for the crushed tomatoes. Mix and add 1 cup of water to lengthen and create a gravy. Bring it to a boil, lower to medium heat and let it cook for 45 minutes. Sprinkle dish with fresh chopped coriander and serve.
