Apple Brown Rice

  • serves 4

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don't like. Try substituting one ingredient for another. Remember words have no flavour; you have to add your own!

Directions for: Apple Brown Rice

2 Tbsp olive oil

1 large onion, peeled and chopped

2 local apples, cored and chopped

2 cup brown rice

½ tsp cinnamon

4 cup water

Salt and pepper to taste

1. Add the onion and oil to a small saucepan and sauté over medium high heat until the onion just begins to turn golden brown, about five minutes. Add the apple, rice, cinnamon, water and seasoning and stir well. Bring everything to a simmer and cover with a tight fitting lid. Turn heat to low and cook until water has been absorbed and rice is tender, about forty-five minutes. Without removing the lid turn off the heat and let the rice rest, undisturbed, for another ten minutes or so before serving.
