Ingredients

bunch arugula, washed and spun dry

to 8 thin slices prosciutto di Parma

Asian pear, thinly sliced

oz Parmesan cheese or Grana Padano, shaved or wedges
Coarse salt and cracked black pepper, to taste
Freshly squeezed lemon juice, for pear and salad (about 1 tbsp./15 ml)

Tbsp extra virgin olive oil, to drizzle over salad (30 ml)

Directions

Step 1

Arrange the arugula, prosciutto and Asian pear on a large plate or platter. Top with shavings of Parmesan cheese. Sprinkle with salt and pepper. Squeeze on some fresh lemon juice and drizzle with olive oil.
