This flavourful side is a great partner to any meaty dish.
Preheat oven to 400 degrees F
To roast the beets, place them in a pan with a little water, cover with tinfoil and bake for 45 to 60 minutes until tender.
Cool, then peel and dice beets. Place in a bowl.
In a skillet, sauté onions in olive oil for 1 to 2 minutes.
Add to beets along with the rest of the ingredients. Mix and adjust seasoning.
