Blue and Pear Salmon

ingredients

skinless filets of salmon 1 ¾ lb (750 g) each
3
slices bacon, crumbled
1
onion, chopped
2
clove garlic, pressed
2
pears, peeled, cleaned and diced
½
cup white wine
¼
cup maple syrup
1
Tbsp chopped fresh savory or 1 tsp (5 ml) dried savory
Salt and freshly ground pepper to taste
2
slices bread, crumbled
4
oz Canadian Blue cheese, sliced

Step 1

Preheat oven to 375°F (190°C).

Step 2

In a skillet over medium-high heat, sauté bacon, onion and garlic. Add pears, wine, maple syrup and savory. Season generously and let simmer 5 minutes.

Step 3

Remove from heat and add bread to absorb liquid.

Step 4

On a parchment paper covered cookie sheet, set one of the salmon filets. Garnish with pear preparation, then add Blue.

Step 5

Cover with second salmon filet and bake 30 minutes. Cut and serve immediately with rice and vegetables.
