Directions for: Blue Cheese and Bacon Potato Salad



1 Tbsp cider vinegar

1 tsp Dijon mustard

1 Tbsp fresh lemon juice

2 tsp minced fresh garlic

¼ cup olive oil

Pepper to taste


3 lbs. red skinned potatoes cooked not cooled

½ lb(s) bacon cooked and drained

1 cup red onion thinly sliced

8 oz good blue cheese

¼ cup fresh basil leaves roughly chopped

1 big bunch watercress stems trimmed

Salt and pepper to taste



1. In a small bowl or jar mix together all dressing ingredients until well combined.


1. Cut warm potatoes, place potatoes in a large bowl and cover with dressing.

2. Add the remaining ingredients and toss gently to combine.
