Why I love this recipe
Great with beef tenderloin.
Heat frying pan on high heat.
Add butter and olive oil, reduce to medium.
Add shallots, saute over medium heat until transparent.
Add mushrooms and saute until lightly browned.
Add chicken stock and reduce by half.
Add whipping cream and reduce.
Add blue cheese, incorporate and reduce until thickened.
Stir in butter.
