medium shallots, chopped finely

pieces assorted mushrooms, chopped

heaping Tbsp butter
2
Tbsp olive oil
¼
cup whipping cream
¼
cup chicken stock
½
cup blue cheese, crumbled
Coarse salt and freshly cracked peeper

Directions
Step 1
Heat frying pan on high heat.
Step 2
Add butter and olive oil, reduce to medium.
Step 3
Add shallots, saute over medium heat until transparent.
Step 4
Add mushrooms and saute until lightly browned.
Step 5
Add chicken stock and reduce by half.
Step 6
Add whipping cream and reduce.
Step 7
Add blue cheese, incorporate and reduce until thickened.
Step 8
Stir in butter.
