Boiled Cassava Root with Fennel and Chilies

Ingredients

Cassava Root- peeled and cut into 1-2” pieces
2
cloves of garlic
Water
Salt
½
Tbsp toasted fennel seeds
½
green onion, sliced thin
½
white onion, diced small
Chili flakes
Deep- fried Cassava Root Chips for Garnish

Directions

Step 1

Place the diced cassava root into a small sauce pan, add the whole garlic and cover with cold water. Add the salt and cook over medium heat until the cassava is tender. Remove the cooked cassava from the heat and drain the water out. Place the cassava onto a serving platter and top with fennel seeds, onions and crisps cassava root chips. Serve.
