Directions for: Braised Bison Short Ribs


2 lb(s) bison short ribs

3 L beef stock

1 cup red wine

1 large onion, medium dice

1 jumbo orange carrot, peeled with medium dice

3 stalks celery, medium dice

4 clove garlic, crushed

1 leaves bay

1 Anaheim chilli, halved

3 piece juniper berry

4 Tbsp canola oil

salt and pepper


1. Season short rib with salt and pepper. Sear over medium heat. Place into roasting pan.

2. Place onion, carrot, celery, garlic, bay, chilli, juniper berry with short rib. Cover with beef stock and red wine mixture.

3. Braise in oven at 300ºF covered. 3-4 hours or until fork tender.
