Tbsp Dijon mustard

anchovy, minced

Tbsp balsamic vinegar

cup extra virgin olive oil

drop Tabasco, or to taste

cup finely grated parmesan cheese

baby romaine lettuce, cut, in, half, and, washed
lemon juice, to taste

Step 1
In a large bowl, combine shallots, garlic, dijon, anchovies, balsamic, olive oil and tabassco. Whisk together and refrigerate until ready to use.
Step 2
In a large bowl toss lettuce with dressing and add parmesan cheese to coat. Add lemon juice to taste and serve immediately.
