g beef tenderloin, cleaned and diced into ½ cm cubes

small shallot, minced

Tbsp Calabrian chili paste
1
Tbsp capers, chopped
1
Tbsp chives, chopped
1
egg yolk
1
splash Chianti vinegar
good-quality extra virgin olive oil, to bind
kosher salt and black pepper

Step 1
Combine all ingredients, except the egg yolk, in a stainless steel bowl.
Step 2
Garnish with egg yolk on top.
Step 3
Season the yolk by sprinkling with salt and pepper.
Step 4
Drizzle with olive oil.
Step 5
Serve with peasant-style country bread (grilled sourdough works best).
