Cauliflower Fried Rice

Cauliflower fried rice is a fantastic veggie-based alternative to fried rice. Packed with vegetables and scrambled egg this dish looks just like the original. Feel free to mix up the veggies you add and add some extra hot sauce to customize your dish.

small cauliflower

tbsp vegetable oil

tsp Knorr® Selects™ Vegetable Bouillon Powder

cup boiling water
1
small onion
2
small carrots, peeled and finely diced
2
cloves garlic, minced

large eggs, beaten
2
tbsp soy sauce
2
tsp sesame oil
½
cup frozen peas
½
cup frozen corn kernels
3
green onions, thinly sliced
Hot sauce, to serve (optional)

Step 1

Place cauliflower florets in a food processor and blitz until the size of rice grains, about 30 seconds. Set aside.

Step 2

Heat vegetable oil in a non-stick pan over high heat. Add onions, carrots and garlic. Cook, stirring often, until starting to soften, about 3-4 minutes. Add cauliflower rice and 1 tsp of Knorr® Selects™ Vegetable Bouillon Powder dissolved in 1 cup of boiling water. Cook, stirring, until all liquid has evaporated and cauliflower and carrots are tender, about 5 minutes.

Step 3

Push everything in the pan to one side. Pour in beaten eggs. Scramble eggs until fully cooked, about 2 minutes. Mix scrambled eggs back into rice mixture. Add soy sauce, sesame oil, frozen peas and frozen corn kernels, cook, stirring, until peas and corn are warmed through, about 3 minutes. Sprinkle with green onions. Add hot sauce, if you like.
