Cedar Plank Shrimp and Scallops with Wood Fired Sword Fish and Fresh Vegetables

cedar plank- soaked overnight

colossal shrimp, p/d tail on

large sea scallops

oz pieces of fresh sword fish
Zest from 1 lemon
Juice from ½ lemon
¼
tsp garlic, minced
Salt and pepper to taste

small red onion, sliced thin
2
large vine-ripened tomatoes, sliced into 3’s
¼
cup olive oil
Salt and pepper to taste

pieces of roasted asparagus

cup roasted new potatoes

Step 1

Toss the large shrimp, scallops and swordfish together with

the olive oil, lemon zest, lemon juice, salt and pepper, set

aside.

Step 2

Spread the sliced onions onto the bottom of the soaked cedar

plank. Layer the sliced tomatoes on top of the onions and

then the marinated seafood. Drizzle olive oil on top and

season with more salt and pepper.

Step 3

Place the cedar plank in a pre-heated 400-degree wood-fired

oven and bake for 15-20 minutes or until the seafood is

slightly firm. Remove from heat and add the roasted

vegetables to the fired plank. Garnish with fresh basil and

serve.
