Cheddar Apple Muffins

3 cup all-purpose flour
⅔ cup sugar
4 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
1 ½ cup shredded Canadian Cheddar cheese
1 cup apple juice
½ cup butter, melted
2 cup finely-chopped pared apple
1. Beat eggs with apple juice; stir in butter and apple. Add all at once to flour mixture; stir just until moistened.
2. Divide batter among 12 large greased muffin cups. Bake 375 ºF (190 ºC) oven 25 to 30 minutes. Serve warm with butter.
3. Swiss Blueberry Muffins: Substitute 1 1/2 cups (375 mL) shredded Canadian Swiss cheese for Cheddar, 1 cup (250 mL) milk for apple juice and 2 cups (500 mL) fresh or thawed, drained frozen blueberries for apple.
