pkg (375 g) sliced bacon, chopped

large yellow-fleshed potatoes, peeled

cups milk
1
tub (500 g) light sour cream
¼
cup butter
2
cups shredded old Cheddar cheese
Fresh chives, chopped
Salt and pepper

Step 1
Cook bacon in skillet over medium heat for about 10 minutes or until crispy. Spoon out onto paper towel lined plate and let drain.
Step 2
Meanwhile, in a pot of boiling water, cook potatoes for about 20 minutes or until tender. Drain and return to pot. Using a potato masher, mash potatoes with milk, sour cream, and butter. Stir in cheese, cooked bacon, and chives. Season with salt and pepper to taste.
