Cheddar Bacon Mashed Potatoes

1 pkg (375 g) sliced bacon, chopped
8 large yellow-fleshed potatoes, peeled
2 cups milk
1 tub (500 g) light sour cream
¼ cup butter
2 cups shredded old Cheddar cheese
Fresh chives, chopped
Salt and pepper
1. Cook bacon in skillet over medium heat for about 10 minutes or until crispy. Spoon out onto paper towel lined plate and let drain.
2. Meanwhile, in a pot of boiling water, cook potatoes for about 20 minutes or until tender. Drain and return to pot. Using a potato masher, mash potatoes with milk, sour cream, and butter. Stir in cheese, cooked bacon, and chives. Season with salt and pepper to taste.
