cup green bell peppers, chopped

cup red bell peppers, chopped

cup broccoli, chopped

cup carrots, chopped

Tbsp olive oil

tsp black pepper

tsp chili powder

tsp dried parsley

cup Cheddar cheese, shredded

Step 1
In a pot over medium high heat, sauté the garlic and onions in oil, then add vegetable mixture and sauté until vegetables are soft.
Step 2
Divide into 4 portions and spoon into tortillas. Add cheese on top and roll up.
