russet potatoes (cubed)
1
can condensed Cheddar cheese soup
¾
cup heavy cream or whipping cream

Tbsp butter
Pepper (to taste)

Tbsp chopped chives or green onion

Directions
Step 1
Cook potatoes in a large saucepan of salted, boiling water for 10 to 15 minutes or until fork tender. Drain well. Set aside for 10 minutes to cool slightly. Mash to desired consistency.
Step 2
In pan over medium heat, combine soup and whipping cream. Cook, stirring, for 3 to 4 minutes, or until simmering. Fold in mashed potatoes. Stir in butter and pepper. Garnish with chives if desired.
