Directions for: Chilled Hungarian Cherry Soup


2 lb(s) fresh Bing cherries, stemmed and pitted

3 cup cherry juice

1 tsp salt

1 sticks cinnamon

1 tsp almond extract

4 Tbsp sugar

8 oz sour cream


1. Add cherries with their juice to pot. Add salt, cinnamon stick, almond extract and sugar. Bring to a boil, turn down and simmer until cherries are soft about ten minutes.

2. Take off the heat. In a small bowl whisk sour cream and some hot cherry juice together.

3. Incorporate sour cream mixture into soup and chill.
