Citrus-Cured Albacore Tuna

1 lb(s) albacore tuna
½ cup sugar
½ cup kosher salt
zest of 2 limes
zest of 2 lemons
zest of 2 oranges
1 Tbsp toasted/ground coriander
1. Mix sugar, salt, zest, and ground coriander. Blitz in food processor to combine flavours.
2. Place some mixture down on a sheet pan, place tuna on top. Generously apply cure on all sides of tuna. Cover and refrigerate for 24 hrs.
3. Rinse tuna loin under water briefly. Pat dry, and allow to air dry in the fridge for 1 hr.
