Citrus Passionfruit & Coriander Tart with Fromage Frais

"We have done a citrus passionfruit coriander tart for this version. However, as seasons change, feel free to switch up the fruit and the spice. You can try strawberry basil, raspberry tarragon, orange saffron, or peach lavender to name a few!"

Citrus Salad

2 - 3 oranges, segmented

1 passionfruit, pulp put through a strainer and juice reserved

1 vanilla bean, scraped of its seeds

Fromage Frais Filling

150 g fromage frais (we use a local cheese company "Little Qualicum"

35 g icing sugar, sifted

1 tsp lemon zest

½ vanilla bean, scraped of its seeds

1 Tbsp coriander seeds, lightly crushed

1 Tbsp candied lemon peel, chopped (optional; we use the French Sabaton brand)


6 - 8 tart shells, pre-baked

Citrus Salad

1. In a medium bowl, place all ingredients and lightly toss and reserve to top the tart. Before topping the tart, strain the segments from the juices so the moisture doesn't make the tart shell soggy.

Fromage Frais Filling

1. In a large bowl, mix all ingredients together with a spatula until smooth.

2. Fill a piping bag with the mixture and pipe into the tart shell about 3/4 up the sides of the tart.


1. Top the tart filled with fromage frais mixture with seasonal fruit mixture and decorate with flowers if desired.
