Coconut Bean Salad

Adding a hint of coconut to regular bean salad gives a sweet nutty flavour that can't be missed.

Directions for: Coconut Bean Salad


2 Tbsp olive oil

1 Tbsp white vinegar

pinch salt and pepper

¼ tsp ground cardamom

¼ tsp ground cumin

1 tsp fennel seeds

2 cup cooked black beans (washed, rinsed and drained)

½ cup grated fresh coconut

2 green onions, chopped

2 Tbsp fresh fenugreek leaves, finely chopped

1 Tbsp lime juice


1. Toss everything together in a large bowl. Serve chilled.

2. Note: Substitute chopped parsley for the fresh fenugreek.
