Cream of Potato Bacon Soup

package bacon

drops Worcestershire sauce

stalks celery
1
cup leeks
1
can canned mushrooms
½
package Little Potato Company Baby Boomers
1 ½
cups chicken stock

Tbsp unsalted butter

Tbsp all-purpose flour
½
cup heavy cream
1 ½
tsp basil, fresh or freeze-dried

dashes salt

dashes pepper

Step 1

Heat a large frying pan on medium heat. (About a six). Put in all the bacon and cook until it is how you like it. When cooked, take off heat.

Step 2

In a very large saucepan at the same heat, put in your butter and let it melt and then add the flour to make a roux. Mix together the two ingredients and let simmer for about a minute.

Step 3

In your roux, add the heavy cream, chicken stock, Worcestershire sauce, vegetables and the pre-cooked bacon. Let soup boil and turn heat down to very low heat (about 2 or 3).

Step 4

Let soup simmer until the veggies are tender which will take about half an hour, stirring occasionally and testing a few times. When the vegetables are tender, add the basil, salt and pepper.
