3 navel oranges, peeled and sectioned (reserve 1/4 cup juice)*
1 lb(s) jicama, peeled and julienned into match sticks
½ cup strawberries, sliced
½ cup fresh blueberries
½ cup red onion, thinly sliced
½ cup Hellmann's® 1/2 the Fat mayonnaise-type dressing
2 Tbsp fresh cilantro, chopped
6 cup baby spinach leaves
¼ cup sliced almonds, toasted
1. Combine oranges, jicama, strawberries, blueberries and onion in large bowl.
2. Stir in small bowl with wire whisk, Hellmann's® 1/2 the Fat mayonnaise-type dressing , cilantro and reserved orange juice. Toss with fruit mixture, set aside.
3. Arrange on serving platter, spinach and top with fruit mixture. Sprinkle with almonds.
4. *SUBSTITUTION: Use 1 can (11 oz./300g) mandarin oranges, drained (reserved 50 mL juice).
