Crepes Parmesan

cup zucchini, shredded

cup squash, shredded
½
cup scallion, minced

cup tomatoes, chopped
½
tsp basil
½
tsp thyme

Tbsp parmesan cheese, grated

whole crepes, 8"
1
tsp parsley
3
cup 7 grain blend, pilaf

Step 1

In a medium-size skillet, coated with no-stick spray, saute the zucchini, squash, scallions, tomatoes, basil, and thyme for about 2 minutes.

Step 2

Drain and add cheese.

Step 3

Place 1/4 cup of filling on the outside edge of each crepe and roll.

Step 4

Sprinkle with parsley, if desired.

Step 5

Serve with 7 Grain Blend Pilaf.
