Hot Sauce

3 Tbsp olive oil

1 Vidalia onion, diced

1 red Habanero pepper, sliced, seeds removed

3 cup cherry tomatoes, quartered

1 cup white vinegar

¼ cup maple syrup

2 tsp sea salt

4 garlic cloves, chopped

Chicken Wings

2 lb(s) organic chicken wings

2 quart cold water

½ cup raw sugar

½ cup sea salt

2 cup all-purpose flour

2 Tbsp smoked paprika

1 tsp cayenne pepper

1 tsp dried oregano

1 tsp garlic powder

1 tsp onion powder

1 Tbsp dried mustard powder

1 Tbsp fine sea salt

Freshly cracked pepper

Canola oil, for deep frying

Blue Cheese Dip

½ cup mayonnaise

½ cup sour cream

4 oz gorgonzola

1 tsp white wine vinegar

Sea salt

Freshly cracked pepper


1 carrot, julienned

1 celery, julienned


Hot Sauce

1. Making the hot sauce: Heat a pot on medium and add olive oil. Add onion, habanero, cherry tomatoes, white vinegar, maple syrup, and sea salt. Bring it to a boil and let simmer for 20 minutes until tomatoes are juicy. Pour sauce into food processor and add garlic. Mix.

2. Making the brine: Into a large bowl add water, raw sugar and sea salt. Stir until dissolved. Throw in chicken wings, making sure they are completely submerged. Cover and refrigerate for 1 to 3 hours. Remove wings and pat dry.

Chicken Wings

1. Heat canola oil in a large pot to 350F.

2. Making the wings: Into a bowl add flour, paprika, cayenne, oregano, garlic powder, onion powder, mustard powder, sea salt, and pepper. Mix. Lightly dredge the wings in the flour mixture. Fry the chicken wings a few at a time, careful not to crowd the pot or the temperature of the oil will fall too quickly. Fry for 6 minutes, until wings are deep golden brown. Drain on a wire rack. Toss wings in hot sauce and shake off excess sauce.

Blue Cheese Dip

1. Making the cheese dip: To a bowl add mayonnaise, sour cream, gorgonzola, white wine vinegar, sea salt, and pepper. Blend using a hand blender.


1. Serve wings with a side of carrots, celery, and blue cheese dip.
