Crispy Cole Slaw

  • serves 8

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don't like. Try substituting one ingredient for another. Remember words have no flavour; you have to add your own!

Directions for: Crispy Cole Slaw

½ cup mayonnaise

½ cup cider vinegar

2 Tbsp Dijon mustard

½ cup green hot dog relish

Salt and pepper

1 heads white cabbage

3 carrots, peeled and shredded

1. Whisk together the mayonnaise, vinegar, mustard, relish, salt and pepper in the bottom of a large salad bowl. Add the cabbage and carrots and toss until well coated. You may serve the Cole Slaw immediately, or if you like make it in advance. The texture will soften a bit as it stands but it will still be very good.
