Crispy Fish and Fries

cup 1% milk
1
egg
1
Tbsp lemon juice
1
cup cornflake crumbs
1
Tbsp dried parsley
½
tsp pepper
1
tsp spicy seasoning blend, salt-free
Cooking spray
1-½
pounds of halibut
Frozen 5-minute fries (My favourite is McCain)
½
tsp seasoning salt

Fruit and Yogurt

cup chopped seasonal fruit (oranges, grapes, cantaloupe)
1
can fruit salad, unsweetened (approx. 1-¾ cups)
1
serving size vanilla yogurt (approx. 1 cup)

Step 1

Preheat oven to 375 degrees F.

Step 2

Pour milk, eggs and lemon juice into a bowl and whisk together.

Step 3

Combine cornflake crumbs and spice on a large piece of wax paper.

Step 4

Spray a 9 x 13″ cake pan with cooking spray.

Step 5

Cut fish into serving pieces approx 3 x 4″ then dunk into milk mixture, then coating mixture. Lift the sides of the wax paper to coat fish. Place fish on sprayed pan. Spray the top of each piece of fish with cooking spray. Place in preheated oven on lower central rack. Set timer for 15 minutes.

Step 6

Spray a different cookie sheet with cooking spray and toss fries onto pan. Lightly sprinkle with seasoning salt.

Step 7

When timer rings for fish, move fish pan to upper center rack and place fries pan on bottom center rack. Set timer for 5 minutes. When that timer rings, toss the fries and switch racks with fish again. Set timer for an additional 5 minutes.

Step 8

Cut fruit into bite size chunks. Combine fruit and fruit cocktail in a small bowl. Place in fridge.

Step 9

Top fruit cocktail with a spoonful of vanilla yogurt.
