Crostini with Roasted Garlic and Caraway

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don?t like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!

Directions for: Crostini with Roasted Garlic and Caraway



1 baguette, sliced thinly on the diagonal

3 Tbsp olive oil

Roasted Garlic and Caraway Top

4 heads of garlic

3 Tbsp of olive oil

1 Tbsp caraway seeds

¼ cup grated Parmesan cheese

Salt and pepper



1. Preheat oven to 350°F.

2. Brush baguette slices with olive oil and place on a baking tray. Bake until they are crispy and golden.

Roasted Garlic and Caraway Top

1. Place whole garlic heads into a small pan and roast in oven until juices begin to bubble from the top and they soften, about 30 minutes.

2. Remove from oven and rest until cool enough to handle.

3. With a serrated knife slice the bottoms off of the cooled garlic heads and squeeze the roasted contents into a small bowl.

4. Add the olive oil, caraway seeds, grated Parmesan and salt and pepper to taste. Mix well.

5. Spread garlic and caraway mixture over crispy crostini and serve.
