Crunchy Pistachio Cranberry Chocolate Chai Biscotti

¼ cup butter
¾ cup sugar
2 tsp chai masala (such as Arvinda’s Chai Masala)
2 tsp vanilla
1 tsp baking powder
1 ¾ cup flour
½ cup dried cranberries
¼ cup dark, milk or white chocolate
¼ cup pistachios
1. Line a baking sheet with parchment paper. Preheat oven to 350F.
2. In a large bowl, cream butter with sugar. Add eggs and mix. Stir in Arvinda’s Chai Masala, vanilla and baking powder. Mix in flour. Fold in cranberries, chocolate and pistachios.
3. Divide mixture into two equal parts. Make two long slender logs and place on baking sheet. Bake in oven for 20 minutes or until biscotti log is cooked through (check with a toothpick or knife).
4. Remove from oven. On a cutting board, cut logs into ½” thick biscottis. Place biscottis flat on baking sheet. Bake for 15 minutes or until biscottis are crunchy.
