Curry Tofu Chutney Salad

With crunchy, sweet apples combined with the creamy curry and tofu, this hearty salad makes for a refreshing balance of sweet and savoury.

Directions for: Curry Tofu Chutney Salad


1 small green apple, cubed

2 lemon wedges

1 Tbsp (15 mL) Indian curry powder

⅓ cup (75 mL) sweet mango chutney

⅓ cup (75 mL) mayonnaise

¼ tsp (1 mL) salt

¼ tsp (1 mL) pepper

1 pkg (350 g) Sunrise Firm Tofu, cut into small cubes

2 stems green onion, fienly chopped

¼ cup (60 mL) cilantro, finely chopped

1 stalk celery, diced

⅓ cup (75 mL) raisins

½ cup (125 mL) cashews, roasted


1. In a small bowl, generously coat the cubed green apples with lemon juice from the lemon wedges. Mix to prevent browning.

2. In a separate bowl, combine curry powder, mango chutney, mayonnaise, salt and pepper. Mix together until well blended – it should have the consistency of salad dressing.

3. In a large salad bowl, mix the tofu, green onions, cilantro, celery, raisins, cashews and coated apples together. Pour dressing on top and toss until everything is well-coated. Serve chilled.
