Moist and chewy chocolate coconut cookies make a great treat.

Preheat the oven to 350° F.
Put the butter and both sugars in the bowl of an electric mixer and beat on medium-high for a few minutes until well blended, light and fluffy.
Add the eggs and vanilla and whip into the butter mixture, then add cocoa and coconut and mix on medium speed until well blended.
Combine the flour(s), baking soda, and salt in a bowl, then slowly add to the mixer and mix on low speed until just blended, being careful not to over-mix.
Line a baking sheet with parchment paper and drop the batter onto the sheet using a teaspoon. For flatter cookies, dip a spoon in water and press down on the dough before baking.
Bake for 9 to 11 minutes undercooked cookies will be moist and chewy and a bit more delicate. If you prefer a crisper cookie, leave them in the oven for a few more minutes.
