Directions for: Feisty Jack's Scotch Egg


8 regular eggs or 12 quail eggs, hard-boiled

650 g sausage meat or minced pork

flat leaf parsley, finely chopped

4 leaves sage, finely chopped

1 Tbsp Kozliks Triple Crunch or English Mustard

zest of 1 lemon

sea salt and black pepper

1 Tbsp mustard powder

50 g plain flour

2 large eggs, beaten

150 g white and panko breadcrumbs


1. Hard boil eggs and let cool.

2. Mix ingredients to form the mince base, then wrap the [8 or 12] individual eggs in the pork mixture. Bread and deep fry at 350ºF for 5-7 minutes.
