This cocktail is so very clearly an homage to a French 75, spirit driven but still elegant with thanks owed to the yeast and effervescence in the Brut Champagne.

Ingredients

1 ¼ oz Blanco Tequila

¼ oz Prickly Pear Liqueur (or juice)

¼ oz agave syrup

½ oz lime juice

2 - 3 oz Brut Cava or Champagne

Directions

1. Mix tequila, pear liqueur, agave syrup and lime juice together. Shake VIGOROUSLY and strain into flute. Top with Champagne and a lime twist.
